Our first Thanksgiving.  A coffee table covered with a sheet and a lot of food for two people.  Simple and happy. I could bore you with a laundry list of all the things in my life I'm grateful for, but when I boil it down to it's essence, my gratitude is truly for my family.  Everything I have, everything I am is because of the parents who raised me, the husband who encourages me, and the daughters who love me no matter what.  They are the reason I feel I can step out of my comfortable space and test new waters.  I'm not afraid of drowning because they're always close by with a life vest.  I may have a small family, but they're mine and for that, I'm grateful.  Click on the article link below to read more about how my family has shaped who I am today.  And have a wonderful, happy Thanksgiving! http://www.deseretnews.com/article/865642240/This-year-Im-thankful-for-those-who-helped-me-find-my-inner-athlete.html?nm=1

Pad Thai

Image
I got to go to Bangkok for a meeting last week and went a day early so I could explore the city a bit on my own first.  Besides visiting the temples, enjoying the view and drinks at Sky Bar, shopping at Siam Paragon, and getting massages for 270 baht ($7.50!) an hour, I also took a cooking class at the Silom Thai Cooking School .  I chose a Sunday morning class because I liked the proposed menu:  tom yum soup, green papaya salad, pad thai, massaman curry, and mango sticky rice . The class was very well organized;  first we took a bus to a wet market to pick up the ingredients and then we walked to the classroom which had three different sections:  one for food prep, one for cooking, and one for eating.  Most of the ingredients that we used were already pre-measured for us, so there was only a minimum of chopping and stir frying but enough that we felt like we were actually cooking!  We also got a go at the enormous mortar and pestle to make the papaya ...

History of Faisalabad City

Image
Before Independence The city of Lyallpur , multicoloured jewel of the lower Chenab organization area, came into being in 1880. The city which is now well known as "Manchester of Pakistan" for its industrial activity, was nothing but a desolate tract of land 100 years age. It did not rain here for weeks together and when it rained, the water vanished in the city land in no time. There was no village nearby. The villages of Dodiwala and Paokianwala which shelter thousands of inhabitants these days, were nothing but a group of a few cottages. Pucca Mari was place of rest for those who travelled from district Jhang to District Lahore. It was in 1885 that the Deputy Commissioner Jhang, on his way to Lahore, broke his journey near the Theh of Pucca Man'. The Deputy Commissioner after resting for a while set out for walk, along with the Tehsildar of Chiniot, towards the west and returned quite late in the evening. He spent the night and rode for Lahore on the next day morning.Aft...

The Prophet Muhammad and the Origins of Islam

Image
The Prophet Muhammad and the Origins of Islam The rise of Islam is intrinsically linked with the Prophet Muhammad, believed by Muslims to be the last in a long line of prophets that includes Moses and Jesus. Because Muhammad was the chosen recipient and messenger of the word of God through the divine revelations, Muslims from all walks of life strive to follow his example. After the holy Qur'an, the sayings of the Prophet (hadith) and descriptions of his way of life (sunna) are the most important Muslim texts. Early Life Muhammad was born into the most powerful tribe in Mecca, the Quraish, around 570 A.D. The power of the Quraish derived from their role as successful merchants. Several trade routes intersected at Mecca, allowing the Quraish to control trade along the west coast of Arabia, north to Syria, and south to Yemen. Mecca was home to two widely venerated polytheistic cults whose gods were thought to protect its lucrative trade. After working for several years as a merchant,...

A Brief History of Islam (part 1 of 5): The Prophet of Islam

Image
A Brief History of Islam (part 1 of 5): The Prophet of Islam In or about the year 570 the child who would be named Muhammad and who would become the Prophet of one of the world’s great religions, Islam, was born into a family belonging to a clan of Quraish, the ruling tribe of Mecca, a city in the Hijaz region of northwestern Arabia. Originally the site of the Kaabah, a shrine of ancient origins, Mecca had, with the decline of southern Arabia, become an important center of sixth-century trade with such powers as the Sassanians, Byzantines, and Ethiopians.  As a result, the city was dominated by powerful merchant families, among whom the men of Quraish were preeminent. Muhammad’s father, “Abd Allah ibn” Abd al-Muttalib, died before the boy was born; his mother, Aminah, died when he was six.  The orphan was consigned to the care of his grandfather, the head of the clan of Hashim.  After the death of his grandfather, Muhammad was raised by his uncle, Abu Talib.  As was ...

Muslim version of their own history

Image
Muslim version of their own history Islam, began in Mecca, claimed to be the revelation of God (Allah) through the angel Gabriel to a man named Muhammad. Muhammad was born in approximately AD 570-571. He was born to the powerful tribe of the Quraish in Mekkah (Mecca). His father's name was Abdullah. His mother's name was Aminah. Apparently Abdullah was a merchant who made caravan trips. He died on a trading trip soon after his marriage to Aminah, leaving Muhammad fatherless at birth. Aminah, his mother, died when he was only six years old. Muhammad was taken in by his grandfather, only to have him die when Muhammad was eight years old. At this time, his uncle, Abu Talib, one of the leaders of the Quraish tribe took him in and raised him. Muhammad was taught the family business and apparently quite successful. A wealthy widow named Khadijah arranged for Muhammad to oversee her trading business, and was so impressed with his skill and appearance that she proposed marriage to him....

Napa Valley Ragnar 2015

Image
The 2015 Fat Boy Racing Team When I agreed to be a part of the Fat Boy Racing Napa Valley Ragnar team, I was coming off the high of the Wasatch Back Ragnar Relay.  As the Napa Valley race drew closer, I was admittedly apprehensive.  Trying to find help to pick kids up from school, logistics of getting to San Francisco, dreading an even deeper lack of sleep than I normally get- all of these factors seemed to be pulling me away from running. But I didn't want to be that girl pulling out of the race with only days to find a replacement.  Plus, my goal this past year has been to see as much of this beautiful world on foot as possible. I'm so glad I said yes. Click on the link below to read what made this relay such a great one for me. http://www.deseretnews.com/article/865641017/Napa-Valley-Ragnar-Relay-brings-runners-together.html

Sweet Little Treats

Image
I wonder how many of you could resist this plate of cakes? I don't think that I could. In the midddle of November, I have been asked to make cakes for a fashion show audience. I am delighted to do this as I love making cakes. I decided to look back over the cakes that I had made and photographed this summer and I fould this plate of tempting beauties. Some of the recipes for these cakes have been published earlier in the blog. The sponge drops are here: Summer in Italy and Sponge Drops The only thing that I changed for the ones on the plate, was to use apricot jam instead of blackcurrant. Couldn't find the others so the next couple of posts will be recipes for the other cakes.

Sourdough Bread, Perfected, I think

Image
Kneeding bread is a good exercise. No kneed bread is fine but a little kneeding makes better bread. IMPORTANT INFO: Using antibacterial spray on your work surfaces prior to kneeding bread will kill the yeast. It makes no difference if it's bakers yeast or sourdough. Those of you who have been following this blog over the years will know that I have been dabbling with sourdough for quite some time. I've had lots of failures as using sourdough is not as straightforward as using yeast. Now we need a drum roll as I believe that I have it sussed.  The result is a light soft bread with a crunchy crust that is all too good to eat. I just wish that I could share it with you all. I actually cooked this bread in a cast iron pan as this helps to steam the outside of the loaf and create this crust. Now, it takes time to make sourdough bread but it doesn't take much effort. A little weighing and mixing and leaving is all you have to know. It's the way that you do theses things that ...
