Mini Homemade Pretzel Dogs

Image
My church held their second annual Highrocktoberfest last week and asked me if I could provide some snacks again.  Last year there was a competition for best cornbread, which I won with my Elote-Style Cornbread Waffles .  This year there was no such competition; I was just told to make something that would go well with beer.  Since I'm not a big beer drinker I wasn't really sure what that would be, but then I took inspiration from the fact that this was a riff on the German Oktoberfest. What could be more German than sausage and pretzel? I pretty much followed Alton Brown's soft pretzel recipe but decided to skip the salt in the pretzel dough since the sausage would provide enough salt.  I also threw in some diastatic malt powder since I had a lot left over from making croissants .  You can use cocktail weiners for this, but I was able to find mini kielbasa sausages at my grocery store so I went with those.  And instead of buying pretzel salt, I just used ...

New Season- New Goals

Image
My, on the far right, claiming my third place prize at the 2015 SoJo Marathon. My 2015 race season is finally over.  And while it wasn't as good as I hoped it would be, it was as good as it could be given my lack of training.  Looking ahead to 2016, I'm not sure I'll ever get back to where I was, but I know I want to try.  The SoJo Marathon was a big disappointment for me.  After winning two years straight, I came in third with my worst course time by 13 minutes.  I finished in 3:13, which by most standards is great, but knowing how fast I ran the course before makes that time hard to swallow. In any case, it's over.  It's time to look ahead and move forward.  I'll take the next couple of months off of any real training and just focus on enjoying my workouts.  Click on the link below to read on, then go out an enjoy this perfect fall weather. http://m.deseretnews.com/article/865639914/Fall-is-the-perfect-time-to-set-new-running-goals.html

Obamacare: Open enrollment Nov 1 to Jan 31

Image
The open enrollment for health coverage under the Affordable Care Act (Obamacare) will start on November 1 to January 31, 2015. This will be the 3rd year of health care sign-ups. Covered California officials said that there are still 2 million residents who are uninsured, primarily Latinos and African Americans and 36% of them don't know that they may be entitled to premium subsidies available under the Affordable Care Act. In contrast, only 16% didn't know about the tax penalty for lacking health coverage. Covered California exchange have 500 storefront locations, they employ thousands of enrollment counselors, and have launched a $29 million advertising campaign and a statewide bus tour, to encourage more Californians to come under the health care umbrella. They said that about 90% of the 1.3 million Covered California enrollees receive subsidies, and more than 200,000 people pay less than $50 a month thanks to that financial assistance. For those who are uninsured tax penalt...

Round 'Em up, Boys: MAG Tidbits from Worlds - October 22, 2015

Image
Here's what happened today… 1. In the next episode of "Chalk Divas," the U.S. took over 10 minutes to chalk the p-bars during podium training. In that amount of time, you could have intercourse – twice  (if you're the average Joe or Jane). Needless to say, the Americans didn't have much time to actually get on the p-bars. And we wonder why Sam Mikulak had overtime problems at Worlds last year……… 2. The pressure is on Manrique Larduet. Carlos Gil, the main coach for Team Cuba, b elieves that Manrique will qualify to Rio in Glasgow . To do so, he will have to win an individual medal during event finals. Randy Leroux is expected to qualify during the Test Event next year. Larduet VT - Podium training Posted by International Gymnast Magazine on  Thursday, October 22, 2015 3. In case you missed it, there will not be a North vs. South Korean vault showdown in Glasgow this year. Yang Hak-Seon, the 2012 Olympic vault champion, is out with a hamstring injury . 4. Also in...

Round 'Em up, Boys: MAG Tidbits from 2015 Worlds – October 21, 2015

Image
Greetings, Gymternet! While the majority of the gymnastics fans wait patiently for the women's competition to begin, the excitement is just beginning for the men's gymnastics fans. Let's take a look at what happened today: 1. The gymternet got really excited about Brinn Bevan's jump to prone fall. @uncletimmensgym @OtotheBeirne yes but that Khorkina moment at 0:32 has me on 🔥🔥🔥🔥🔥 — Casey Magnesium (@caseymagnesium) October 21, 2015 Who knew that jumping to your stomach could merit 5 emojis? This is the state of men's gymnastics today. 2. Kenzo has silenced his haters. Mr. Twisty has a double salto in his routine, and it's not a wussy double salto – like a double Arabian or something. Wait for it… Yes, folks, that was a triple-double as a second pass. 3. If you were reading Tim Daggett's tweets, you'd assume that Japan is on the verge of being sent to the Test Event. A ginormous disaster of epic proportions, you might say, awaits them. I've...

Italian Turkey Meatloaf

Image
This meatloaf isn't a typical meatloaf but it has become my favorite.  Made with turkey meat, stuffed with cheese, basil and marinara sauce.  It's loaded with flavor.   I like to serve with roasted vegetables (zucchini, red pepper, onion and mushrooms).   Ingredients: 1.25 lbs. ground turkey (I use Jennie-O Lean Ground Turkey)  2  garlic cloves, minced 1/2 cup chopped onion, finely chopped 2 eggs 1/2 cup panko crumbs 1/2 cup marinara sauce  4 oz. asiago cheese, diced 1/4 cup grated parmesan cheese 1/4 cup basil, chopped  1/2 teaspoon salt 1/4 teaspoon freshly ground pepper After cooked 1 hour add: 3/4 cup marinara sauce 4 oz. fresh mozzarella, sliced (I like Bel Gioioso Brand) Mix everything together and form into a loaf on a baking sheet. Bake at 375 for around 1 hour.  Remove from oven and spoon marinara over top and place fresh mozzarella slices over it bake additional 15 minutes.  Garnish with fresh basil. Recipe adapt...

Round 'Em up, Boys: 2015 Worlds Tidbits – October 20, 2015

Image
Let's skip the 80s intro. Here are some tidbits on the men's side from Worlds… 1. I don't know what the German men have been doing, but it seems that they all have hand injuries . Marcel Nguyen has a left middle finger injury. Andreas Bretschneider has a finger injury. 2. Check out this  article on the Dutch gymnasts with eponymous skills . On the men's side, you have the Zonderland on parallel bars and the van Gelder on rings. For the WAG fans out there, they also mention the Wevers. 3. A breakdown of potential D-scores for Kohei Uchimura. The blog predicts around a 39.4 – provided that Kohei performs his Li Xiaopeng on vault. 4. Don't recognize most of the Italian men? It's okay. It's mostly a new crop of guys. Matteo Morandi had to have meniscus surgery, and Alberto Busnari, the pommel horse god, has been left home. 5.  Ryohei Kato is at 80-90% after an ankle injury. 6. There was a long article on the Ukrainian men. Here are my key takeaways: Oleg Ver...

Noodles and Company removes artificial ingredients from core menu

Noodles and Company, The Broomfield, Colorado based fast casual chain,  has pledged that artificial colors, flavors, preservatives and sweeteners have been removed from its core menu, including noodles, sauces, soups, condiments, breads and dressings. The platform is supported by a marketing campaign centered around the phrase “Made. Different — Real Food, Real Cooking, Real Flavors.” Additionally, the company said that by 2017, all meat and poultry served will come from animals that have never been given antibiotics or hormones. That’s already true of Noodles & Company’s pork. This month, bacon will also be antibiotic free, with steak and meatballs to make that claim by mid to late 2016. Last will be antibiotic free chicken, already in test in Colorado units, which will roll out by early 2017, said Mark Mears, Noodles & Company executive vice president and chief marketing officer. By November, all restaurants will use a hormone free Cheddar Jack cheese, and Noodles & C...

Round 'Em up, Boys: Articles, Videos, and other Tidbits from 2015 Worlds - October 19, 2015

When it comes to the World Championships, the gymternet blows up. Sign onto Twitter, Tumblr, Facebook, or Instagram, and you'll find doctoral dissertations analyzing a single photo and what it means for team lineups. On the men's side, though, it's much harder to find information. You gotta go looking for it, and in many cases, you need Google translate to find the good stuff. So, I thought that I'd round up everything that I've been reading and watching and put them into blogs during Worlds. Here's what I came across today… 1. Every listicle should start with Fabian Hambiceps. Baby Fabian was so adorable. Here he is with his ex-girlfriend in 2008 : 2. Alexei Nemov hopes that Russia can take third behind China and Japan. He has high hopes for Denis Ablyazin on floor, vault, and rings. (No duh!) You might recall that Denis won gold on floor last year – beating Super Twisty Kenzo Shirai. In Nanning, Denis was the bronze medalist on rings, as well. 3. The Brazili...

Life Insurance Coverage 101

Know the basics on your life insurance coverage, since it is a long term investment that will protect your love once. Life insurance should be designed to fit your situation so it is not an "one size fits all." Most people, get the most coverage for the lowest cost as possible that they can afford. There are two types of life insurance policies: Term life insurance - this is basically a policy that gives death benefit for love once after you die. There are no other features. Whole-life or permanent life insurance - this policy combines death benefit for love ones with a cash value that you can access while you are still alive. Term insurance is a wise choice for younger and healthy people who are just starting out with life insurance since it is less costly. In term insurance you can keep your premiums as low as possible. Married couple usually purchase this kind of life insurance to keep them secured financially in an event one dies. Most companies also offers this kind of ...

You Don't Have to Be the Best to Be YOUR Best

Special runs can happen anywhere, not just in Boston.  This was the finish of one of the best races of my life, and it happened in my own backyard! Runners are a competitive bunch.  Whether we're racing to beat the clock or to beat the runner right next to us, we seem to always be striving for something more.  This is a good thing, except when it isn't.  For many, the last couple of weeks has brought the good news that the Boston Marathon has a spot open for them.  For others, the news was more disappointing.  Even though many achieved a qualifying time, the popularity of the race is such that it's not enough to just qualify.  You have to qualify with a cushion.   For so many runners, the social media announcements of Boston acceptance has felt like salt in a wound.  Qualifying standards may seem forever out of reach.   I've run Boston 5 times, and it was great every time.  It's a special race.  But it's not special because the...

When you give your everything, anything can happen

During the 2012 London Olympic Games, over 10,000 athletes gathered in London to test their stamina and skills with other contestants. Every four years, these Olympians teach the world many lessons—we see tears of joy for winning gold, and singing national anthems with pride, and tears of sadness for touching the finish line micro seconds behind the gold medalist. Michael Phelps, an American swimmer, won 16 Olympic medals: six of them gold, and two bronze in Athens in 2004 and eight gold medals in Beijing in 2008. I was reading an interesting article as to what made him different from other swimmers and how he managed to capture so many gold medals.  I was surprised to read that Phelps learned a trick or two from other underwater inhabitants, like dolphin, and used backstroke dolphin kick to make the big difference. Lesson #1:   Learn to do things which make the difference in your life and business. Another sport I always admired is TRIATHLON where competitors have to dev...
