Favorite Potato Salad

It has been awhile since I posted a new recipe.  This recipe for potato salad isn't new but an all time favorite.  I've been making it for years and I'm surprised I've never posted it.  Today we are having a cookout and this potato salad is always requested.  It's a basic recipe and turns out perfect every time. Ingredients: 2 eggs 2 lbs. new red potatoes, cut into bite size pieces (about 7 cups when cut up) 1/3 cup celery, diced 1/3 cup onion, diced 1/2 cup mayonnaise (I only use Real Hellmann's Mayo) 1/4 cup sour cream 2 teaspoons yellow mustard 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 1.  Place cut potatoes in a large saucepan; add enough water to cover. Bring to a boil. Reduce heat; cook 10 to 15 minutes or until potatoes are tender. Drain well.   2.  Meanwhile, place egg in small saucepan; cover with cold water. Bring to a boil. It's about time I posted another banana ice cream recipe on here! Especially since I practically live off this stuff. A life without 'nana ice cream is not a life worth living. That is why you simply have  to give this a try if you haven't already. Before I first tried this I had myself convinced that I absolutely hated bananas and that my feelings toward these yellow little fellas were never going to change. But it all changed as soon as I: a. One of the things that has made me think it's time to let this blog go is that I keep re-visiting old recipes. I have started to do the thing that has always panicked me in conversation with others and also in my professional writing life: I have started to repeat myself. Good writers have a decent routine and get it out over and over again. They get out the same phrases, the same stories, the same hang-ups all the time and hope that no-one notices. Great writers, really brilliant ones, never repeat themselves. They're that fucking crazy that they have enough new things churning around in their melons to always have something new to say. I fall somewhere between the two in that I occasionally repeat myself, but try not to. The overwhelming urge to repeat yourself comes from either having to hit a deadline and having not enough to say or from the frustration that you said this once before and it really felt like NO-ONE WAS LISTENING!! Blogging just got so much more exciting - I've finally begun to grasp the very basics of Adobe Lightroom which makes my pictures look a teeny bit more professional and I don't have to be embarrassed about posting them anymore. Zucchini Noodles with a Zesty Broccoli Dressing

Sometimes it just so happens that you throw a bunch of ingredients in a bowl, blend them up and end up with some unexpected awesomeness you didn't see coming. I'd like to think that was the case with this dish so I'm going to share the recipe with you even though I've only made it once. This is a perfect side dish to go with anything really, and makes for a nice, refreshing addition to any meal. Because you just can't go wrong with zoodles. Yum. Let me know if you give it a try! Serves: 2 Zucchini Noodles: - 2 large zucchinis Dressing: - 200 g broccoli florets (about small head) - 100 g silken tofu - 1 tbsp lime juice - 3 tbsp unsweetened plant-based milk - 1-2 handfuls fresh basil leaves - 1 1/2 - 2 tbsp sweet white miso paste How to: 1. If you love your soups thick and creamy, then this is a recipe you have got to try.  The potato pairs perfectly with the buttery dill flavor, and to drive it two degrees north of amazing, I've added cheese and bacon.  You're welcome.   Ingredients: 5 medium potatoes, peeled and cubed 1/2 cup chopped onion 1 1/2 cups chicken broth 1 Tbsp. butter 1 Tbsp. flour 1/4 tsp. salt dash black pepper 1 cup milk 1 sprig of fresh dill 3/4 cup shredded cheddar cheese 4 slices of bacon, cooked and chopped Directions:  Cook the potatoes and onion in a large saucepan with enough boiling water to cover the vegetables for about 15 minutes or until tender.  Drain the water out and reserve 1 cup of the potato/onion mixture.  Dump the rest of the vegetables and the chicken broth in a blender or food processor and blend for about 1 minute or until smooth.  Set aside.  In the same saucepan, melt the butter.  Stir in the flour, salt, and pepper.  Add in the milk...

These past couple of weeks I've been completely stuck in a dinner rut, unable to get out. Or rather, I've been too lazy to cook any proper meals, making hummus and rice cakes my go-to din din companions for better or worse.
