Salted Caramel Oatmeal

Salted. Caramel. Oats. You like the sound of that? Oh yes you do. Having dessert(ish) foods for breakfast is what life is all about. Seriously, if you haven't tried the Creamy Chocolate Oatmeal  that I posted some time ago, get on it, NOW! So next up is this sinfully indulgent beast of a breakfast that'll leave you fully satisfied and ready to take on a new day. This recipe owes its sweetness to date paste, or date caramel as I prefer to call it (see below). I make mine by mashing a few soft dates with a fork but this may not be so easy if you don't have the right kind of dates. The ones I'm talking about here can be seen above; soft, un-pitted ones that are super easy to peel and have a melt-in-your-mouth consistency. If you can't find these where you live, soaking a few of the drier, pre-pitted dates overnight would probably work as well. The Weekly Wrap

Well, this week did not go as planned!  On Monday, I awoke feeling rested, well, and ready to start the week. I was even up early, so I sipped on a cup of Dunkin Donuts bakery flavored coffee and watched a few episodes of Forensic Files.  When I got up to get ready for work, I made sure my hair was extra pretty for the day so I could take a picture of my new highlights. I went super dark back in January, and I absolutely love(d) it; but it faded so fast-- as dark usually does with my hair. I do not want to keep darkening it thus I decided to go with highlights and start the process of going back blonde. Around 10 AM, I started getting really nauseous. I endured some pretty rough side effects from a medicine I am on, over the weekend, but I thought that was over, so I was unsure why I was feeling so bad. I had a very nice email recently from a reader seeking advice. My favourite kind of reader email, really - actually asking my opinion. It gives me licence to take a deep breath and just go on and on and on about what I think, which is the state in which I am happiest, as long-time readers of this blog will know. Anyway the email went "Shall I take my 2 year old on a 7 hour flight to Montreal?" And my answer, which ran to several hundred words, was: "No." I guessed that if she was even asking me, she was really looking for a "no" answer anyway, she just wanted it validated by a dispassionate third party. EASY Crock Pot Chicken Taco Meat

It doesn't get any easier using a crock pot and only 3 i ngredient to make this chicken taco recipe.  We love Mexican food and this chicken is great for tacos, nachos and even on a salad. 2 lbs chicken breasts (if frozen, make sure they are thawed)  1 packet taco seasoning 16oz jar salsa (I like to use Medium Restaurant Style Tomtits Salsa, it's thick and flavorful) Taco toppings: tomato, lettuce, avocado , cheese, sour cream, cilantro, etc Directions:  Sprinkle chicken breast on all sides with taco seasoning.   Lay breasts in bottom of crock pot  then pour in salsa.  Cook on low for 4 hours, or high for 2 hours, or until chicken breasts are tender. Shred chicken and mix with some or all of the cooking liquid and continue to cook for another 15-20 minutes. Serve on taco shells or tortillas with all your favorite toppings. Serves 6-8

Blueberry Baked Steel Cut Oatmeal

This was my first attempt at making baked oatmeal and if I had known how good this was I would of been making it all winter long!  I don't usually eat oatmeal once the spring weather appears but this oatmeal will continue to make an appearance.  I really like that it can be made the night before and baked in the morning.  The nuts rise to the top for a crispy topping with the creamy oats underneath and the sweet blueberries throughout.  If there are any leftovers it warms up wonderfully in the microwave. Now that my kids are set square on the path of growing up, we are none of us stuck in a non-speaking, non-walking hell, no-one is pregnant, no-one is postpartum, I can feel myself regressing, going backwards, getting younger. When you have a baby you explode outwards. Sometimes quite literally. But also metaphorically. All your stuff  explodes outwards. Your neuroses, your anxieties, your life, your everything goes KAPOW out into the world. Everyone talks about you and what you are doing. Everyone compares notes going "She's really freaking out," or "She's really bossing it," or "She's just so relaxed!" or "She's just SO uptight." None of it is complimentary - not really. It's all a total diss. Weekend Recap: Side Effects but Mainly Fun!

It's Monday morning, I am up bright and early to get a blog post written before I get ready for a great week of work. (Is that a good way to look at each week or week?) This weekend was so fun; I did not want it to end. Despite feeling some really bad side effects from my new medicine on Friday evening and Saturday, I thoroughly enjoyed myself.  Friday, this is how I graced everyone with my presence at work... It is suffice to say that someone definitely needed some highlights and a trim. My dark hair, despite all the protectant my stylist put on there, faded fast! I guess that shows how I am meant to be blonde, right?! I think so, thus plans were made.  After work, I came straight home to lay down for a little while. Nausea and a migraine were were taking over my body, so I napped on and off. Raspberry and Cherry Crumble Pi(e) for one

Happy pi(e) day! I always love to celebrate otherwise insignificant days that have somehow come to revolve around food. There is National Cinnamon Roll Day (which is kind of a Swedish thing), Mardi Gras, several pancake days and so on. This day in particular kind is so geeky and amazing at the same time that you just can't help but loving it.  I pondered long on which pie to make. There was an idea of making it a banoffee-thingy lurking somewhere inside my mind, and vegan key lime pie had a certain appeal to it as well. As I was brainstorming, I kind of ran out of time. So what better way to save the day than to whip up an extraordinarily simple crumble pie! All you need is frozen or fresh berries and a couple of pantry staples and you're all set and ready to go! Life Lately: An Extensive Update!

It has been a while, little blog of mine. Is anyone still here? I do not deserve for you to be; but if you are, thank you so much for stopping by and still checking in to see if I have written a new post.  To help put incorrect assumptions and rumors to rest about what is going on with me and my life, I wanted to finally share an update. This will probably be quite a long post -- most of mine usually are as I love to write, so bare with me while I spill out an abundance of words to try and articulate what has been going on in my life over the past several months.  First, a picture of the sunrise from my office this morning.
